We are using Waveshare to PoE Ethernet converters in combination with this DNC software. Everything works perfectly when we are connected via Ethernet cable, but as soon as we switch to WI-FI, it stops working.
Can anyone help us with this? Or has anyone experienced this before?

It should work the same - whether wifi or ethernet (physical wire) doesn't make any difference to the DNC software. It's just communicating with Windows telling windows to send and receive to such-and-such an IP address. Whether that IP address is on the end of a wire or over the ar waves is transparent to the program.
I suspect your problem is that you're connecting to the wrong IP address. If it's the same network device then I'd expect the ethernet port to have a different IP address to the wifi
