we have a old Track 2 CNC knee mill and would like to have a system to save programs from the machine onto a computer or whatever. Is there a proven solution for this?

Assuming it's the Protrak TMX Conversational control then you may need software or a device from the machine tool manufacturer to do any offline programming and file transfer.
Look in the programming manual of the machine. Does it mention uploading/Downloading files to from the computer?
